Rhubarb-thyme margarita | Girl Next Door Podcast

Rhubarb Thyme Margarita

adapted from Cider & Rye

Makes two margaritas.

  • 3 ounces tequila (We used Hornitos)
  • 2 ounces orange liqueur (We used Cointreau)
  • 2-3 ounces rhubarb thyme syrup (see recipe below)
  • 1 ounce fresh lime juice (about 2 limes)
  • a small bunch of fresh thyme to muddle and some for garnish

Rhubarb Thyme Syrup

This syrup is easy to make and you also get a jar of rhubarb compote from the process, which Erica turned into a crisp to share. (See recipe at LADDventure)

  • 3 cups chopped fresh rhubarb
  • a small bunch of fresh thyme (muddled gently)
  • 1 cup sugar
  • 1 cup water

Add all to a medium saucepan and bring to a boil over medium high heat. Bring heat down to a simmer and cook until the rhubarb is barely tender, about 10 minutes. Remove pan from heat.

Strain the mixture through a cheesecloth-lined strainer or colander. Place the strainer over a mason jar to collect the syrup. Do not squeeze the cheesecloth to extract more liquid, just let gravity do the work, or the syrup will be cloudy and a little too viscous. Feel free to give it a gentle stir or two with a spoon, but no more than that.

We love social media, like really love it. But, we’re discussing some of the bigger questions of connection, comparison, and being intentional with social media. We’re both loving the online relationships we’ve made (Kelsey’s a guest on the Sarah R. Bagley Podcast this week thanks to the magic of twitter!) and share the things we’ve learned about using social media effectively and enjoyably.

It is definitely summer here in the desert, and it’s here to stay for a while, so we’re talking summer survival tips, and ways to make the most of the long, hot days.

Unfortunately our swimsuit season also starts earlier than other areas of the country, so it is upon us. Erica has found some good vintage-inspired suits at Popina Swimwear, and Kelsey has had good luck with Title 9.

In neighborhood news, Kelsey meets a new helpful neighbor, and Mr. Vodka on the Rocks makes another friendly appearance.

Our neighborhood is feeling festive lately. Erica had a kick-off-the-summer pool party, and there was a competing party down the street the same day.

We’re also dreading some potentially awkward conversations with Saw Guy.

  1. Hi ladies! I love your podcast. It’s so fun…lots of laughing and I kind of want to start trying some cocktails!
    I just wanted to say, regarding your long summers- we have long cold winters here in Maryland, and around early November, I start thinking of HOW I WILL MAKE IT THROUGH WINTER. We do similar things you guys do (plan trips to our home state of Texas, understand that it will be cold, etc), but when winter has about a month left, I start to get really crazy and find it very hard to cope!
    Hope your guys’ summer goes quickly!
    Oh! Also- totally getting my best friend a Birch Box subscription for her birthday. She loves make-up, face & hair products and spends a shocking amount of time in Sephora and I think she will love the box! 🙂

  2. Thank you, Ashley! Yes, we start getting that antsy, slightly depressed feeling about the heat in September when we are SO DONE but still have a month to go. Hopefully with frosty cocktails through the summer this one won’t be so bad (she said hopefully). I think I want to send Birch Box to some friends too, who wouldn’t love it?   7. I did it! I’ve used the same 4 makeup products every day for the past 10 years. And the same shampoo, and soap and…wow I really have to branch out.
    I’m also going to get my Bro in law this for christmas.
